Sparkling Shiraz

Crafted from premium Shiraz grapes grown in the cool, elevated vineyards of Eden Valley, the fruit was handpicked at optimal ripeness to retain bright fruit character and natural acidity. Fermentation occurred in small open-top fermenters with gentle plunging to preserve aromatics and fine tannin structure. After pressing, the wine was matured in seasoned French oak to enhance texture and complexity. The base wine was then blended and re-fermented in bottle using the traditional méthode (méthode traditionnelle). The wine spent over 18 months on lees, developing layers of savoury depth, fine bead, and creamy texture before being riddled, disgorged, and finished with a carefully balanced dosage to maintain freshness and drive.

Harvested in the cool of night, the fruit was pressed off skins and cold-settled before a natural ferment began with a touch of solids for added texture. Nearing completion, the wine was transferred to seasoned French oak for partial malolactic fermentation and four months of gentle lees stirring. Re-fermented in bottle using the traditional méthode, it spent over 18 months on lees, building savoury depth, a fine bead and creamy texture. After riddling and disgorgement, a balanced dosage was added to retain freshness and drive. Elegant, vibrant and richly layered — a sparkling crafted for celebration.
