Winemaking
This 2022 Pinot Gris was sourced from our Eden Valley estate in the rolling hills of Pewsey Vale with an elevation of 550 metres. The fruit was picked at the cool of night and then delivered to the winery, where it was gently pressed. It was then cold settled for 48 hours before being rack. Fermenting at cool temperatures with a small number of solids allowed us to create this textural perfumed wine.
Winemaker's Notes
An easy-drinking wine that is acid-driven in style, dryer and linear on the palate to provide a highly refreshing taste. Finished off with good texture, which adds to the complexity and finesse of the wine.
Food Matching
Grilled seafood, creamy fettuccine carbonara, fresh oysters.
Another great year as we had a beautiful winter with plenty of rainfall, which meant a healthy and vibrant growing season. Hailstorms at the beginning of vintage caused damages to our vineyard, resulting in lowered grape yields than previous years, however the quality of the fruit was not affected.
The cooler temperatures throughout the vintage made it ideal for whites. While the cooler temperature created a much longer vintage, with reds being harvested in May, by letting the fruit develop on the vines for longer, we’re seeing beautiful flavours with a lot of depths and concentration. This has undoubtedly created some stunning and elegant wines.
