This wine reveals notes of blueberries, blackcurrants, and a hint of pepper. With a medium body, it boasts flavors of red cherries, black currants, chocolate, and spice. It's a wine that coats your mouth with its elegant tannins. enticing your senses.
This Shiraz was harvested at optimum ripeness, at around 13.5-14 Baume, with 20% whole bunches remaining in the fermentation. The fruit was kept at 10-15 degrees for two days before being allowed to warm and initiate fermentation. After 8 days on the skins and gentle daily hand plunging, the wine was pressed into 80% seasoned and 20% new French oak 500L puncheons, where it matured for 15 months. No fining or filtration was applied to this wine.
The vines has definitely benefited from the rainfall this year. It allowed for the fruit to develop more depth and concentration of flavour, resulting in a wine that has amazing flavour, while maintaining finesse and balanced.
Slow cooked beef bourguignon
The 2022 vintage saw plenty of rainfall during winter, which was fantastic, as it helped to nurture the vines and set up the vineyard for the spring and summer months. The growing season, leading into vintage, saw cooler days and cooler nights compared with previous years. This creates a much longer ripening period, resulting in wines with more delicate and elegant flavours while presenting their various varietal characteristics.
