Winemaking
This Pinot Gris was sourced from our Eden Valley estate in the rolling hills of Pewsey Vale with an elevation of 550 metres. The fruit was picked at the cool of night and then delivered to the winery, where it was gently pressed. It was then cold settled for 48 hours before being racked. Fermenting at cool temperatures with a small number of solids allowed us to create this textural perfumed wine.
Winemaker's Notes
An easy-drinking wine that is acid-driven in style, dryer and linear on the palate to provide a highly refreshing taste. Finished off with good texture, which adds to the complexity and finesse of the wine.

Grilled seafood, creamy fettuccine carbonara, fresh oysters.
The 2023 vintage brought about just above-average rainfall, initiating a cool and wet season that led to delayed flowering compared to the usual timing. As the vintage approached, the cool weather persisted, with temperatures lower than average. Consequently, the ripening periods were significantly slower, enabling enhanced fruit development and acid retention within the vineyard. The combination of the colder and wetter season led to low yields but increased concentration, ultimately contributing to the wines' remarkable intensity.
