WINEMAKING

Millon Wines all endeavour to capture the true fruit characteristics of our different vineyard sites. We work hard to encapsulate those characteristics, to refine them, to not overpower them with oak or other winemaking influences, but to instead let the fruit come forward. Our winemaker Simon Gilbert has 5 generations of winemaking in his family dating back to 1842, when his great-great grandfather Joseph Gilbert planted Eden Valley’s first ever grape vines at Pewsey Vale, which was then officially established as a vineyard site in 1847.

Simon has an extraordinary gift in being able to make the most of our natural environment and climactic conditions to craft wines of true distinction and finesse. His approach to viticulture is directly tied to the belief that wine quality is built upon the health and vitality of the soils and vines from which they are born, and Millon Wines are all made to be honest representations of their respective growing regions. Knowledgeable, innovative and with decades of demonstrated winemaking ability, Simon is always seeking the new and fresh whilst respecting and admiring long-held traditions.
