2014 The Roots 53 Cabernet Sauvignon

Winemaking

After careful assessment and selection, the grapes for this wine were picked during the cool morning hours in order to maximise the best aspects of the fruit. The grapes were then crushed and the wine was fermented for up to 10 days in tank, with pumping over taking place twice daily. Primary fermentation was followed by racking, malolactic fermentation and French oak treatment before final blending and assessment.

A deep and dark cherry red with subtle touches of garnet

Aroma

Fresh and vibrant aromas of cassis, violet and herbs are present alongside subtle hints of mulberry

Palate

Generous and full bodied, this Cabernet Sauvignon displays distinct mulberry and chocolate oak characters, supported by notes of cinnamon. There is great structure to varietal tannins which make for a strong, lingering finish
