Winemaking
All fruit was destemmed Not crushed into open-top fermenters. The fruit was then held at 10-15 degrees for 3 days before allowing to warm and start fermentation. After 10 days on skins and pumped over twice daily the wines were pressed to 20% new, 80% seasoned French oak Hogsheads where they matured for 15 months.
Winemaker's Notes
This 2021 Estate Cabernet Sauvignon is unique, and differs from traditional Cabernets’ greener and dryer styles. This 2021 Cab has beautiful flavours driven by its cool climate fruits, a complex depth of flavours while maintaining beautiful varietal notes.

Slow cooked lamb shanks with warm eggplant salad, pan fried pork or veal meatballs.
The 2021 Vintage shaped up to be a very good year. The first break of the drought since 2020 brought much-needed rainfall throughout winter, perfect for our whites. The longer ripening period resulted in richer, more flavourful whites, with higher acidity levels and great depth of flavour and colour. Reds also benefited from the extra time on the vine, developing complex flavours and aromas.
