    This single-vineyard Shiraz comes from our Eden Valley estate in the rolling hills of Pewsey Vale. This wine is driven by fresh acidity and fine tannins, with intense layers of red fruits that dominate the palate.

    Winemaking

    This single vineyard Shiraz comes from our Eden Valley estate in the rolling hills of Pewsey Vale with an elevation of 550 metres. All fruits were destemmed, not crushed and gently tipped into open top fermenters. The fruits were then held at 10 - 15 degree Celsius for 3 days before allowing to warm and start fermentation. After 10 days on skins and pumped over twice daily, the wines were pressed into 20% new, 80% seasoned French oak hogsheads, where they matured for 15 months.

    Winemaker's Notes

    The 2021 Estate Shiraz is your classic style Eden Valley Shiraz with beautiful notes of violets, wild berries and cocoa. Through extra time on the vine, this Shiraz developed rich and complex flavours and aromas.

    VINTAGE CONDITIONS

    The 2021 Vintage shaped up to be a very good year. The first break of the drought since 2020 brought much-needed rainfall throughout winter, perfect for our whites. The longer ripening period resulted in richer, more flavourful whites, with higher acidity levels and great depth of flavour and colour. Reds also benefited from the extra time on the vine, developing complex flavours and aromas.
